Savoury Oats with Mushrooms

What you’ll need:

  1. 1/2 cup of Quaker Oats for Rice
  2. 1 cup rice
  3. 1/2 yellow onion, chopped
  4. 6 pieces of mushrooms, washed and sliced
  5. Parmesan cheese
  6. Salt and pepper

Chicken and Squash Risotto

What you’ll need:

  1. 2 tbsp olive oil
  2. one brown onion – diced
  3. 3 boneless, skinless chicken breast fillets – diced
  4. 500g pumpkin or butternut squash – diced
  5. 200g courgette – diced
  6. 2 cups washed rice
  7. 2/3 cup wholegrain rolled oats (I used Quaker Oats For Rice)
  8. 800mls water or unsalted stock (I used homemade chicken and vegetable stock)
  9. Optional: grated parmesan or cheddar cheese

Spiced Mushroom Rice

What you’ll need:

  1. 1/2 cup quaker oats for rice
  2. 1 1/2 cups white or brown rice
  3. 1 chicken stock cube
  4. 2 1/2 cups to 3 cups water
  5. 1 tsp garlic powder (or 2 cloves of garlic, finely chopped)
  6. Salt & pepper to taste
  7. 1 tsp coriander seeds
  8. 2 cloves
  9. 2 star anise
  10. 1 to 2 tbsp thyme
  11. 8 sliced shiitake mushrooms or whole dried mushrooms

Oat Rice with Chicken and Black Bean Sauce

What you’ll need:

  1. 350 grams of boneless chicken breast, cubes
  2. 2 tablespoons of Lee Kum Kee black bean sauce
  3. 1 tablespoon of water
  4. 1 cup of rice grains, washed
  5. 1/2 cup of Quaker Oats for Rice
  6. 1 clove of garlic, diced
  7. 4 thinly sliced ginger
  8. 2 stalk of spring onion, chopped
  9. 1 tablespoon of cooking oil
  10. 2 tablespoon of dark soy sauce
  11. A dash of white pepper

Pumpkin Rice (Suitable for Vegetarian)

What you’ll need:

  1. 1 tbsp cooking oil
  2. Dried mushroom (soaked overnight), cut to thin stripes1 whole pumpkin (skinned), cubed
  3. 1 small cabbage, sliced thinly
  4. 2 cloves garlic, peeled and minced2 small onion, finely chopped2 cups of rice + 1 cup of Quaker Oat for Rice1 tbsp premium dark soya sauce
  5. 1/2 tbsp premium light soy saucewater
